Ingredients:
10oz fresh bean sprouts
4oz mushrooms, thinly sliced
1 bunch of scallions, chopped
1 chicken breast, cooked and shredded
1 banana, sliced
1oz cashew nuts
8oz can peaches, drained (juice reserved), chopped
4 celery sticks, chopped
Dressing:
2 tbsp soy sauce (ideally low in sodium)
1 tbsp vinegar
1 tbsp reserved peach juice
½ cup cream
Instructions:
Arrange the bean sprouts in a large salad bowl and add the mushrooms, scallions, chicken, cashews, celery, banana and peaches.
Place all the dressing ingredients into a jar with a lid, and shake until well combined. Pour the dressing over the salad and gently mix.
Enjoy this salad with cooked ham.
