Ingredients:
2 eggs, beaten
2 cups cauliflower, broken into florets
1 medium onion, chopped
2 cloves garlic, crushed
2 tbsp butter
6 slices bacon, cooked until crisp, then crumbled
1 cup parmesan cheese, grated
½ tsp mild chilli power
Instructions:
Preheat the oven to 350° Fahrenheit and grease a baking dish.
Heat the butter in a large frying pan. Add the garlic and onion and cook until the onion is soft and turning golden. Then stir in the chilli powder and add the cauliflower. Cook for a few minutes.
Place the cauliflower/onion mixture into a bowl and add the beaten eggs, cheese and crumbled bacon. Transfer mixture into the baking dish and bake in the oven for about 1 hour.
Serve immediately with a tossed salad for a delicious and light lunch.
